One of the highlights of this growing effort is the strong partnerships SWACO is building with local restaurants—like Budd Dairy Food Hall, which has played a key role in piloting food waste composting in a real-world setting. When the program began, the first step was analyzing the restaurant’s trash. By studying what was being thrown away, SWACO could better understand how much food waste was ending up in the landfill and where it was coming from.
