Michael and John proudly present Burger Royale, a culinary venture inspired by their combined 50+ years in fine dining. This burger experience is a nod to Mid-Century Modern cuisine, emphasizing precision and quality at every step. Each ingredient is meticulously selected with no shortcuts.
Their shared love for movies, particularly those with memorable food references, sparked the idea for Burger Royale. Drawing inspiration from Quentin Tarantino’s “Pulp Fiction,” they offer dishes that evoke the 1950s such as butter-toasted brioche buns, hand-pattied meat made to order, and fresh-cut fries cooked in beef tallow, all topped with fresh ingredients.
Owners Michael Will and John Watson bring a wealth of experience to Burger Royale. Michael’s hospitality journey began in the late 1970s at the Canal Winchester pool concession stand, managed by his father. He later worked as a busser and server at Elsner’s Steakhouse in Cleveland Heights. In 2001, Michael joined Cameron Mitchell Restaurants, where he met his wife, Jill. Over his 25+ years in the industry, Michael has held various roles including server, manager, beverage manager, assistant general manager, and general manager. He has opened three restaurants, worked in four concepts, and relocated to three states. For the past eight years, Michael has been a server at Mitchell’s Ocean Club, continually learning from industry leaders.
John graduated from the Culinary Institute of America (CIA) in 1989 and began his hospitality career at 55 on the Boulevard. He quickly advanced through the ranks to become executive chef, showcasing his culinary skills and dedication to the craft. John soon became the Chef Proprietor at Merlot in Hilliard, a restaurant that was consistently ranked in the Top 10 in Columbus. For the past 14 years, John has continued to hone his culinary and hospitality skills as a server at Mitchell’s Ocean Club.
Together, Michael and John operate the Burger Royale Food Truck, known for its precision, quality cuisine, and unique dining experience. They are now excited to continue their journey at Budd Dairy Food Hall.
